The grapes were carefully sorted upon arrival at the winery. Fermentation took place in concrete eggs with wild yeasts at low temperatures, to retain the freshness and aromatics of the cool-climate fruit. The wine was aged for eight months in concrete eggs.
Complex aromas of green apple, hay and herbaceous notes are underpinned by remarkable minerality. Textured and full flavoured with a wonderful fluency and a rich energy on the finish.

Winery | Each component of the blend comes from carefully selected, high-altitude, cool climate sites which produce grapes with aromatic complexity and beautiful freshness. The Sauvignon Blanc vineyard is located in the premium viticultural region of Gualtallary, where the vines are planted in calcareous soils at 1,400 metres above sea level. The Semillon grapes come from a low-yielding 50-year-old vineyard in La Consulta, where the vines grow at 1,000 metres elevation in sandy soils and produce rich, concentrated wines. The Chardonnay component comes from La Carrera which is located at 1,700 metres above sea level in sandy soils which are supported by gravel and boulder. |
