Produced only in exceptional vintages, the carefully selected fruit was vinified in temperature controlled 100 hectolitre stainless steel vats. Fermentation took place with selected yeasts at approximately 24 to 26 °C, followed by maceration lasting 10 days at 28 to 30 °C to extract the colour, flavour and tannins. Daily tastings took place to ensure the desired levels of extraction were achieved. The wine was aged in 20 to 25 hectolitre Slavonian oak vats for 36 months, followed by six years of bottle ageing.

Winery | The Pinino estate vineyards are located in the north of Montalcino, embedded like a natural amphitheatre into the beautiful and famous hillside of Montosoli. This distinctive geographical location has become known as one of the best areas of the region for wine production. The Sangiovese vines are grown in north-west and north-eastern facing vineyards, situated at an altitude of 310 to 320 metres. The lower temperatures allow the grapes to express their finesse. The Riserva comes from the oldest plots on the vineyard where the soils are rich in clay, galestro (a rocky, clay-schistous soil with a flaky texture and free draining properties) and limestone. The vines are trained according to a spurred cordon method. The vineyards are cultivated sustainably and are certified by Agriqualit; copper and sulphur are the only treatments employed and the grapes are hand-picked. Each vineyard is divided in micro-sections and the vinification is tailored to each section. |
