The grapes were delivered in small bins and immediately gently pressed. The must fermented slowly at controlled temperatures for 18 to 20°C, partly in oak barrels of 30 to 40 hectolitres and partly in tonneaux, where malolactic conversion also occurred. The wine was clarified through natural sedimentation before being matured in large French oak barrels of 30 to 40 hectolitres, with a smaller proportion in tonneaux, on the lees until the end of August. Once bottled, the wine matured in the bottle for a minimum of three months, resulting in a total maturation period of at least 14 months.

A rich, complex and characterful wine full of Alpine freshness, with elegant notes of pear, toast and melted butter, layered with spicy tobacco and vanilla, through to a long, mineral finish.

The vines are grown in the Unterebner region of the Alto Adige, in a vineyard situated at 400 to 600 metres elevation. The vines are planted on slopes, of which 85% face southeast and 15% face south, this allows the vines to benefit from maximum sun exposure to help the fruit ripen at this altitude. The micro-climate offers extreme interplay between sunny days influenced by the Mediterranean climate and cool nights marked by the cold downslope winds from the surrounding mountains. This creates a long hang-time for the fruit, allowing good accumulation of flavours and sugars, which are naturally balanced with acidity from the cool nights and refreshing winds. The vines have an average age of 10 to 30 years and are grown in calciferous gravel with loam, partially with porphyry bedrock, which imparts a distinctive mineral character to the wines.
