The grapes were gently pressed after a short period of maceration. Fermentation took place with wild and selected yeasts at controlled temperatures of 18°C in small stainless steel tanks. The wine matured without malolactic conversion in stainless steel tanks to retain a crisp and fresh style.

‘Selida’ is produced with grapes from a selection of vineyards with south-westerly exposure on some of the steepest terraces in the region at 300 to 500 meters above sea level. The climate is characterized by an extreme interplay of sunny days influenced by the Mediterranean climate and cool nights marked by the cold downslope winds from the surrounding mountains. The significant diurnal temperature variation encourages the development of naturally balancing acidity in the resulting wine. The soil is composed of calciferous loam with gravel and the rocky soils contribute to the mineral character. Guyot training of the vines helps to produce a balanced yield. ‘Selida’ comes from Old High German, meaning ‘small farmstead’, and pays tribute to the longstanding culture of smallholdings that still constitute the strength of Cantina Tramin. The grapes are hand-harvested into small bins to preserve the quality of the fruit.
