- A complex array of herbaceous, floral, and citrus notes are layered with mineral accents through to a full-flavored palate of wonderful length.
The grapes underwent careful, manual sorting before being pressed in a pneumatic press which allows perfect extraction of the juice while respecting the integrity of the grapes. The alcoholic fermentation started in stainless steel vats for a better homogenization of the cuvée and to obtain significant turbidity. After three to four days, the wine was transferred to French oak barrels of second or third use with temperature control for long aging on the fine lees without stirring.

Winery | A close neighbor of Montrachet, lying between Chassagne and Puligny, Saint-Aubin is a village in the southern part of the Côte de Beaune, which was granted recognition in 1937. The vines are mainly planted on the right flack of the wide coomb which snakes its way up towards La Rochepot. The appellation area is spread over two different hill ranges: the Montagne de Savoie, which delimits the end of the Cote d’Or, and the other is the Montagne du Ban, which is perpendicular to it.
