A close neighbor of Montrachet, lying between Chassagne and Puligny, Saint-Aubin is a village in the southern part of the Côte de Beaune, which was granted recognition in 1937. The vines are mainly planted on the right flack of the wide coomb which snakes its way up towards La Rochepot. The appellation area is spread over two different hill ranges: the Montagne de Savoie, which delimits the end of the Cote d’Or, and the other is the Montagne du Ban, which is perpendicular to it. The vineyard slopes are steep in places and are planted at elevations of 300 to 350 meters, with an eastern or
southeastern orientation to optimize the vine’s exposure to sunlight and encourage the ripening of the grapes. The Chardonnay grapes flourish in white clay soils which have a high limestone content, which contributes to producing fresh, elegant wines. The vines are hand-harvested.
