The bunches were immediately chilled to 5° C. The grapes were then destemmed, crushed and macerated for eight to 10 hours. Gentle pressing in an oxygen reductive environment was followed by must clarification in inert vats. Part fermentation took place in stainless-steel at 14-16°C, and part-fermentation in oak barriques lasting for 15 to 20 days. The wine was aged on its fine lees for 18 months in barriques, followed by six months in stainless steel and a further six months bottle ageing.
