The estate vineyard is planted in the AOP of Picpoul de Pinet, just three kilometres from the de Thau. This large lagoon influences the climate by contributing to cooler evenings and nights and by depositing humidity onto the vine leaves, which translates into vibrant freshness in the wine. The vines are in conversion to organic status, therefore the use of sprays and chemicals is prohibited. All treatments are based on copper, sulphur and citrus essential oils, as permitted in organic viticulture. Weeding takes place mechanically and cover grass is being trialled to help limit soil erosion and bring nitrogen into the soil. The fruit is harvested at night to preserve the freshness in the berries.
