  • The Mix-up is a textural and aromatic orange wine with complementing aromas of ripe stone fruits with hints of elderflower, guava, lemon zest, and sage. The palate is round and textured with elements of cinnamon and vanilla enveloping the ripe tropical fruit.

A limited edition wine, made from the three varieties that are traditionally used in Champagne production: 2019 Chardonnay, 2019 Pinot Noir and 2020 Pinot Meunier. Each variety was vinified separately; the hand-picked grapes were whole bunch pressed into a combination of stainless steel tanks, an egg-shaped fermenter and Burgundy barrels (of which 5% were new) for fermentation and maturation. The egg shape suspends the natural lees, resulting in a textured wine. The musts underwent alcoholic fermentation and malolactic conversion with wild yeasts and underwent frequent lees stirring, imparting complexity. The wine spent between six to 18 months maturing in either French Burgundy barrels, an egg shaped vessel, or stainless steel tanks, before being bottled without fining or filtration.

The Mix-Up Volume III is an aromatic wine with red fruit notes of raspberries and strawberries complemented by ripe stone fruit and zesty lemon. Refreshing and textured, with an uplifting and crisp finish.

Winery

The vines for this wine are grown in the single vineyard of ‘Coombe Bottom Vineyard’ in the rolling hills of Horsham in East Sussex. Planted in 2016, the two-hectare site faces southeast, on a gentle slope, maximising exposure to the sun. The soils are made up of green sandy loam, a free draining soil. The vineyard is managed conventionally with hand-harvesting and careful grape sorting in the vineyard, once the fruit has reached optimal maturity.
