The grapes were picked in small lug boxes from the Vigneto Paradiso single vineyard, and carried the short distance down to the winery. The fruit was carefully sorted to ensure only the highest quality was vinified and immediately crushed. The grapes were fermented with indigenous yeasts in stainless steel tanks at controlled temperatures of 25 to 30°C to preserve the Sangiovese characteristics. Frequent pump-overs, combined with a long maceration period on the skins ensured good extraction. The wine was aged in the estate cellars with natural temperature and humidity control, for 42 months in oak casks of varying capacities. The wine was bottled without fining.

Winery | Carpineto's Montalcino estate is one of the highest in the appellation at an altitude of around 500 metres above sea level. The single vineyard 'Vigneto Paradiso' is planted with Sangiovese Grosso on a dry-farmed hillside with a northern exposure. Planted at a density of 2.20 x 0.90 metres, which is the equivalent of over 5,000 vines per hectare, the vines are trained on a unilateral cordon system. The sedimentary soil has a galestro frame with clay accumulations dating to the Eocene era, some 15 million years ago, which provides good drainage. The vines are sustainably farmed and the vines have moss growing underneath them, which encourages soil biodiversity. The fruit is handpicked at optimum maturity. The unique microclimate, in this panoramic setting, produces fine wines with elegance, minerality and great longevity. |
