This wine is a benchmark expression of crisp freshness and citrus flavors. It offers lime and pineapple flavors that complement herbaceous notes and lead to a zesty finish. Aromas of lemon zest, orange, and delicate hints of jasmine add to the complexity. It is a favorite of the winemaker due to its exceptional flavor and consistency. The grapes were harvested at the ideal balance of sugar/acidity levels, determined by flavor development. Harvest took place at night to retain freshness and minimize oxidation. The grapes were crushed and chilled in a bag press, and the free-run juice was separated for this wine. The juice was lightly clarified using vegan fining agents before being slowly fermented at 14 to 16°C with carefully selected yeast to optimize varietal expression. The wine spent a short time on the lees to achieve excellent balance with natural acidity and a soft, creamy texture.
