- Palest pink sparkling rosé where aromatic notes of passion fruit, mango and pomelo are accompanied by a fine stream of citrussy bubbles. Uplifting and refreshing with a mouthwatering finish.
The base wines were fermented according to the Charmat method at low temperatures for optimum integration and delicacy of the bubbles. The sparkling wine was left on its fine lees for a short while to impart texture before filtration, which was followed by pressurised bottling. This method of producing sparkling wines helps to conserve the typical, fruity profiles of the young and aromatic rosé wines. ‘La Folie’ was vinified as an Extra Brut sparkling rosé with a dosage of under 4g/l.
