The fruit was hand-picked and whole bunch pressed followed by 100% barrel fermentation in select French oak (28% new oak). Fermentation was allowed to occur naturally, with the wild yeasts responsible for introducing more complexity and personality into the wine. Barrels were lees stirred throughout a nine-month oak maturation period, without any malolactic conversion. Only the best barrels were selected for the final blend.

Winery | The Reserve Chardonnay comes 100% from the Lagan Estate vineyard, which is the oldest vineyard on the estate, and is situated next to the winery. It exemplifies the power and poise of the Gingin clone in one of the best areas of Margaret River for Chardonnay. The low-yielding vineyard produces bunches with characteristic ‘hen and chicken’ architecture typical of the Gingin clone that produces fruit of intense concentration with high, natural acidity. The vines flourish in Margaret River’s renowned ancient granite soils, which have an abundance of ironstone gravel. These free-draining soils have low water and nutrient holding capacities, providing the optimum growing conditions to achieve a balance between foliage and fruit and deliver superb aroma and flavor intensity. The Indian and Southern Oceans meet here, engulfing the vineyards with fresh, sea breezes, promoting natural balance.
