- A bouquet reminiscent of red apple and white peach, with mineral overtones. White stone fruit flavors follow through on the palate, with a subtle texture and a tight-knit acidity lingering in the background, which provides length and persistence. A cracker, but it is a variation on a theme. Classy, demure, and gentle for the first two or three seconds, and the rest of the experience is mineral-drenched and unremittingly challenging on account of the intensity of rapier-sharp acidity. This makes the 2022 Laissez Faire Riesling the vintage with the most potential I have tasted, so be sure to grab a case and settle in for a lovely long ride.
With a focus on natural winemaking, this was made in small batches from handharvested grapes. The fruit was whole bunch pressed. The juice was then settled without the addition of enzymes, sulphur or acid. Once settled, it was allowed to ferment naturally at a low temperature for six weeks.

| Winery | The grapes are grown in a south facing vineyard in the Porongurup sub region, which was planted in 1998 at a density of 1,800 vines per hectare. The vines are all on their own rootstocks. The soils are a sandy loam and the vineyard is irrigated to achieve the optimal amount of moisture required. Sustainable vineyard practices are employed throughout the vineyard, with minimal copper use and their own compost is used to retain biodiversity and a healthy ecosystem. No herbicides are used. |
