The Chardonnay grapes come from the family’s estate vineyards grown in the heart of the Chablis appellation. The climate is continental, with cold winters allowing the vine to rest and the sap to descend and warm summers, allowing the grapes to ripen. The yields are carefully controlled to ensure the highest quality of fruit, by concentrating the flavours in the grapes. The vineyards are managed using sustainable agriculture methods, reducing the use of chemicals in order to respect the land and its environment. Chemical weed killers are not used and the vineyard is carefully cultivated in order to respect the biodiversity of the soil. The soils are predominantly Kimmeridgian, which comprise limestone and clay, and a significant proportion of fossilised oyster shells. It is from this particular subsoil that the wines of Chablis draw their unique character, purity and minerality.
