  • Expressive with plenty of plum and blackberry flavours, this wine also has warm earth and spicy undertones. It has fine, rich tannins and a long, lingering finish. Pair it with tender lamb shanks in a hearty tomato gravy and creamy mashed potatoes. The 2019 summer was exceptionally hot due to a dry winter and early spring. November and December were particularly tropical, with higher average maximum temperatures and 50% more rainfall than usual, leading to fantastic vine growth. January was also hot, with minimal rainfall and several days above 40°C, but the fruit didn't ripen as quickly as expected. The vintage began on February 19th. Yields were lower than expected, but the quality of the fruit is excellent.

Traditionally vinified, fermentation took place in original open vats over 155 years old, with 18 months of maturation in similarly aged large French oak prior to bottling. Smaller, predominantly French oak barrels were also used, and the wine from these was blended back during the final filtering and bottling.

Varietally expressive with ample plum and blackberry fruits, this wine has a warm earthiness and spicy savouriness that immediately appeals. It has a backbone of fine, opulent tannins and a rich, persistent finish.

Tahbilk vineyards are grouped along the banks of the Goulburn River, and an anabranch of it flows through the estate. The vines are grown at around 134 meters elevation of gently undulating and flat terrain. The soils are sandy loams with ferric oxide content, which varies from wonderful sand near the anabranch to denser loams on the plains. Tahbilk has Shiraz vineyards dating back from the 1860s to the 1990s. The oldest surviving block is the 1860 block, planted on its roots in sandy soils, which has made it impossible for phylloxera to colonize the vine roots. The vines are planted on single wire trellises, with a mixture of head and cordon training; all are cane pruned. Tahbilk's vines are sustainably cultivated; composting and mulching improve soil health by promoting earthworm activity. Mulching helps to control weeds and conserves water, reducing vine stress. The old vines are hand-picked, while younger vines are machine-harvested.
