  • An elegant and refined Sangiovese brimming with ripe plum, red berried fruit and overtones of liquorice and tobacco. With great balance and fine tannins, this is an excellent expression of variety and terroir.

The grapes were gently destemmed and pressed, followed by skin maceration which lasted 10 to 12 days, extracting the aromas, flavours and fine tannins. Fermentation took place with wild yeasts in stainless steel tank, under strictly controlled temperatures. The wine was then racked before it went through malolactic conversion, softening the palate. Maturation lasted for 24 months, in large, neutral barrels of Slavonian oak; the wine underwent a further six months bottle ageing in cellar prior to release.

The Sangiovese grapes come from the single vineyard Il Roccafiore in the Todi subregion of Umbria. The micro climate experiences cold and rainy winters and cool ventilated summers, which help to produce a refreshing vibrancy to the grapes. The vineyard is positioned at 300 to 380 metres above sea level, where considerable thermal excursions between day and night, allowing a slow, gradual ripening of the fruit which encourages rich fruit flavours balanced by natural acidity. The soils comprise white clay, calcareous marl, chalk and sand, offering the vines great nutrients and balance. The Guyot-trained vines are carefully cultivated following sustainable and organic principles. Weeding takes place in alternate rows, care is taken to prevent soil erosion and compaction; green manure is used for fertilisation and grasses and cruciferae plants improve the soil structure and fertility.
