- This is classic Cabernet: a nose showing Bordeaux-style cigar box aromas, along with leafy, blackcurrant nuances. On the palate, it is smooth and velvety, elegant, richly styled but with lovely freshness. A full and long-lasting finish.
The fruit was hand-picked, sorted and crushed in static, stainless steel fermenters. Fermentation lasted for three weeks with a very gentle maceration. The time on the skins allowed for the softening of the tannins. The components were then aged for 10 months in a combination of new and one-to-two year old French oak barrels, prior to blending and bottling.
Inky purple, with classic Cabernet Sauvignon aromas of blackcurrant and bay leaf layered with cedar and chocolate nuances. Showing lovely cool climate typicity, this is medium bodied, with velvety soft tannins and a deliciously long finish.

Winery | Former ‘Winery of the Year’ by James Halliday and Matt Skinner, Larry Cherubino wants his wines to be distinctive and to speak clearly of their variety and vineyard site. He believes in paying meticulous attention to the vineyard, canopy and water management, picking at the right time and minimal intervention in the winery. Larry also makes wine under the Laissez Faire label, an exquisite range of natural wines which are the ultimate expression of site, made in small batches from hand harvested grapes. From delicate whites to opulent reds, all his wines have pure class and finesse. The vineyard was planted in 1998 in Margaret River with 1,666 vines per hectare onto their own rootstocks. The vineyard has a beautiful northern aspect maximising the sun's exposure and promoting the ripening potential and concentration of flavours in the grapes. |
