Fermentation took place in temperature controlled vats with regular punching down of the cap to extract the desired level of colour, flavour and tannins. The wine was aged for 24 months in 30-hectolitre barrels made from Italian and Slavonian oak.
Produced from only the best clusters of grapes, this wine has an intense cherry aroma with a touch of violets, chocolate vanilla and tobacco spice. Full, rich and long with firm tannins.

Winery | The finest Sangiovese grapes were carefully selected from the estate's hillside vineyard and picked at their peak maturity level. The vines have an average age of 15 years and are grown in medium textured clay soils, yielding approximately eight tonnes per hectare. Umberto Cesari was one of the first wineries in Emilia Romagna to be awarded the SQNPI, the national Italian quality scheme for Integrated Production.
