- A smooth, fresh, and fragrant wine, with aromas of cherry, blueberry, and wild berry notes. Velvety on the palate with an attractive spicy note on the finish.
The grapes were harvested at the desired level of maturity. Fermentation took place with selected yeasts in stainless steel tanks at controlled temperatures of between 24 to 25°C. It lasted for five days, followed by malolactic conversion which softened the palate. The wine was left to rest in tank for six months, prior to being bottled. Made without any oak influence to express the purity of fruit.

Winery | The Dolcetto vines were planted between 2000 and 2007, on a south-easterly facing plot of 0.83 hectares. The vines are trained according to the Guyot method and yield a maximum of 90 quintals per year. The soils are partly marl-clay and partly sandstone marl. The different combination of soil types within the same sub-zone creates a structural diversity which is reflected in the characteristics of the wine. The vines are cultivated sustainably; Costa di Bussia holds the SQNPI certification, which governs the use of phytosanitary processes and irrigation in the vineyard as well as full traceability of the grapes used in the wine production to ensure compliance. |
