The grapes were pressed together and racked into concrete tanks, where fermentation took place at a controlled temperature. Once completed, the wine remained on its fine lees for three months in concrete tanks, with batonnage once per week, followed by maturation in 1,200 litre foudres

Winery | Scala Dei is a trai lblazer in the Priorat region, both historically and stylistically. Its origins date back to 1194, when Carthusian monks laid the winery’s sacred foundations and produced the first wines in 1263. Today it maintains the artisanal, traditional spirit of its origins, under the guidance of enigmatic winemaker Ricard Rofes. In their seventy hectares of historic vineyards, Garnacha and Carinena grapes flourish the wines exquisitely capture the essence of a rugged terrain and mediterranean climate. Handcrafted with limited production, the wines exhibit a grace, energy, and transparent terroir expression that distinguish them from others in the region.
