Great attention was paid to harvesting dates along with gentle destemming and minimal use of sulphur. Only the free-run portion of the juice from selected parcels was used for this wine, to ensure the elegance and purity of flavour was maintained.

Winery | The vines are grown in various sites across the Great Southern region in Western Australia, which is influenced by the warm easterly winds from the Great Australian Bight. The vines are planted at a density of 1,600 vines per hectare and are all grown on their rootstocks. The vineyards are situated with a northern orientation, optimizing the long sunlight hours, which promotes ripening and maturation of the grapes, and are irrigated as required. The soil types vary, with each terroir imparting its characteristic to the resulting wine. Grapes were selected from various sites across the Great Southern. Great attention to harvest dates along with gentle de-stemming, minimal use of sulphur and using free-run juice from select parcels of fruit ensured the elegance and purity of flavour were maintained. |
