Each variety was hand-picked at optimal ripeness levels, very early in the morning when temperatures were still low, to preserve the quality of the fruit. This rosé was made using the saignée method; the grapes were whole-bunch macerated to extract the desired colour. Fermentation took place under controlled temperatures to retain the maximum aromas. A proportion of the wine was matured in French oak barrels. Malolactic conversion was not carried out to preserve the wine’s freshness and natural acidity.

Winery | The grapes for the 'Source of Joy' come from organically grown vineyards in the Languedoc, where the terroir was recognized by Louis XIV as an exceptional place for producing rosés. The combination of two soils, schist and limestone, with a hilly terrain has created a complex network of underground water that ensures an exceptional source of pure water for the vineyards. The vines benefit from the Mediterranean climate, long sunshine hours, dry growing season, and a cooling influence from the nearby Mediterranean Sea, resulting in concentrated fruit with naturally balancing freshness. |
