  • An aromatic and concentrated Southern French blend bursting with ripe red berried fruit and spicy overtones. Silky and smooth on the palate with fine tannins and a hint of licorice on the finish.

Each variety was vinified separately, with traditional techniques of destemming and maceration to slowly and gently extract the colour, flavour and fine, smooth tannins. The vatting period lasted for three weeks, encouraging full flavour development. The wine was made with minimal intervention and without influence of oak, to allow the full expression of the terroir.

Winery

The vineyard is situated in the heart of the Côtes de Roussillon, on clay and limestone soils surrounded by the two ranges of the Corbières. Part of the estate extends under the Cathar castle of Quéribus, on black schist soil. The shale is beneficial as it stores the heat of the sun and radiates it at night. The Grenache and Carignan particularly benefit from this, and reveal exceptional sugar concentration. The grapes for this wine come from old vines which are carefully selected for their low yields of 28 hectolitres per hectare. The region benefits from the warm Mediterranean climate, which is tempered
by cooling sea breezes. The vines are cultivated organically and sustainably; use of sexual confusion of predators is employed as an alternative to insecticides, biodiversity is preserved and the use of cover grass is an important source of organic matter which promotes the activity and biodiversity of the soil. Part of the estate is already certified organic and the remainder is in conversion. The vines are hand-harvested at optimum maturity.
