From high in the Andes surrounding Salta come Piattelli's Cafayate wines, grown at an elevation of over 1,795 metres. The distinctively colourful Argentinian mountains are formed of many geological layers. The splendour of this area is the pure water and extreme thermal amplitudes. The diurnal temperature differences create longer ripening periods, which concentrate the flavours in the grapes, with the cooler evenings encouraging a balancing freshness. Additionally, the grapes develop thicker skins to cope with the intensity of the UV rays at this altitude, which further concentrates the flavours in the wine. This makes this not only one of the most beautiful but also one of the premier grape-growing regions in the world.
