Winery	Some of the oldest vineyards in the estate are of varying altitudes, ranging from 200 - 400m altitude and an average age of 25 years. They are planted on granite and schist soil with a clay loam structure. The grapes are hand-picked into small crates by variety, with bunch sorting. Fermentation is in open Lagares with a submerged cap and temperature control (22C—25C), basket pressing, and malolactic fermentation. The wine is then aged 18 months in new oak barrels, followed by 3 years of bottle ageing before market release.
