Winery	The grapes come from Delaire Graff Estate’s mountain vineyards. The vines have an average age of 14 years and are trellised on a five-wire Perold system, a form of a vertical trellis that helps protect the vines from wind damage. The climate is Mediterranean, with warm, dry summers mitigated by the ocean's cooling sea breezes, resulting in a slower ripening process encouraging natural balancing acidity to balance the concentrated fruit flavours. The terroir comprises Hutton leaf soils derived from granite and has good physical and water retention properties. The vineyards are cultivated sustainably and are certified by IPW. The grapes were handpicked in the early hours over various ripening periods. Picking criteria were based on flavour to ensure optimal sugar concentration and balance of acidity.
