Cellar master Xavier Berdin skilfully blends varieties, growths and reserve wines with harmony and passion until the perfect balance is reached: the epitome of the Palmer & Co. style. The Pinot Noir and Meunier grapes were carefully hand-harvested, and
vinification took place using the traditional method. This prime blend is enriched by a solera of Pinot Noirs from the Grand Crus of Mailly and Verzenay. This cuvée comprised a high proportion of reserve wines of 35%. It was then bottle-aged for three years on the lees in the 18-metre-deep chalk cellars, which imbued the wine with incredible complexity. Dosage 6-7g/l.
