Tasting Notes
Al-Cantara A Nutturna Terre Siciliane Sicily 2022 presents a unique and captivating expression of the Nerello Mascalese grape, typically known for its deep color and complexity. This rare white wine, made from the dark-skinned Nerello Mascalese variety, combines a complex bouquet of aromas that includes tropical pineapple, wildflowers, and a subtle spice, enhanced by underlying notes of liquorice, herbs, and mint.
On the palate, it delivers a fresh, dry, and full-bodied experience with vibrant fruit flavors and mineral undertones, showcasing the volcanic terroir of Sicily. The wine's crisp acidity and light texture lead into a satisfying, lingering finish that highlights the delicate complexity of the winemaking process.
Winemaking Process
This wine is produced with utmost care and attention to detail, with the whole Nerello Mascalese grapes pressed and vinified in a reductive style with minimal sulphur. Fermentation takes place in stainless steel tanks at a controlled temperature between 14°C and 18°C, lasting 12 to 14 days. After fermentation, the wine undergoes an extended period of maturation on its fine lees for 4 to 6 months at low temperatures. During this time, the wine is stirred three times a week to enhance its texture and impart a delicate complexity. The final product is bottled after three months of bottle ageing, ensuring a harmonious and balanced wine.
Food Pairing
Al-Cantara A Nutturna pairs beautifully with seafood dishes, grilled vegetables, and light pasta with herbs. It also complements fresh salads, risottos, and white meats like chicken or turkey.

Winery | The 15-hectare vineyard is situated in the Contrada Feudo S. Anastasia at an elevation of approximately 620 metres above sea level, where warm days and cool nights encourage a long ripening period concentrating the flavours in the grapes while retaining balancing acidity. The vines are grown in volcanic soils rich in minerals and fossils. The soil is permeable to air and water and is rich in pumice stone and microelements, which allow the plants to produce a complex aromatic profile. The 14-year-old espalier-trained vines are spur cordon pruned. They are cultivated following organic and biodynamic principles, and the vineyard is converted to organic status. The organic sulphur and copper treatments are only used when powdery or downy mildew seriously affects the vineyard. The vine moth is combatted by using natural pheromones, which generates confusion in the moth and prevents it from attacking the fruit. |
