Winery	Phermento is made up of 100% Lambrusco di Sorbara grapes, which are grown in Medici Ermete’s Soliera Estate is located in the north of the Modena Province. The vineyard is situated between the Panaro and Secchia rivers, where their ancient alluvial beds enable this vine variety to flourish. The vines are trained using the spurred cordon system, and yields are kept significantly lower than those specified in the Lambrusco Reggiano DOC specification, which helps to ensure greater health for both the vine and the grapes. The soils are made up of sandy elements, which contribute significantly to the wine’s elegance, while the clay-rich parts of the soil are responsible for the fine structure in the resulting wine.
