Vinified following a philosophy of minimal intervention and low-sulfur use. The grapes were meticulously selected and gently vinified with wild, indigenous yeasts to ensure the greatest expression of the fruit and the terroir. The wine was matured for 15 months in 100% French oak barriques, adding refined complexity.

Winery | The 55-year-old vines are grown in the single Les Marchais vineyard, which faces the 1er Cru plots of Lavaux St Jacques and Clos St Jacques. It is one of the best plots in Gevrey Chambertin. The Guyot-trained vines are planted at a high density, with 3,500 per hectare. The vineyards are certified organic, employing only organic and natural fertilizers, without herbicides or insecticides. Meticulous vineyard management includes ploughing, pruning, and green harvesting to ensure the vines produce grapes of optimum quality. The vineyard soils are clay and limestone with large, chalky pebbles. |
