Aroma and Flavour Profile
The wine opens with an inviting bouquet of ripe cherry, savoury plum, and nuanced spicy notes. Delicate hints of Mediterranean herbs complement the fruit, adding complexity to the aromatic profile. On the palate, Il Pumo Salice Salentino 2021 is full-bodied and warm, offering a rich, velvety texture that leads to a refreshing, balanced finish. The wine’s vibrant fruit and well-integrated spice make it an excellent pairing with a wide variety of dishes.
Winemaking Process
The grapes for this wine were hand-harvested in the latter half of September, ensuring only the finest fruit was selected for fermentation. After harvesting, the grapes underwent a temperature-controlled maceration process for approximately 10 days. This extraction process was followed by alcoholic fermentation with selected yeasts, ensuring a controlled and expressive fermentation. The wine was then aged in stainless steel tanks to preserve the purity of the fruit, allowing the natural characteristics of the Negroamaro and Malvasia Nera grapes to shine through.

Winery | Produced in the area of Monteforte d'Alpone within Soave Classico, from a volcanic hillside vineyard where the soil is clay and basalt. The vines yield 125 quintals per hectare. The harvest occurs at the end of September when the grapes have reached optimum maturity and phenological ripeness. The family business has been handed down through the generations of the Tessari family since the early 1900s. The estate was renamed Ca'Rugate in 1986, taking its name from the volcanic hills where the vineyards are located. Now run by the fourth generation, Michele has brought a lively, passionate, entrepreneurial spirit. Considerable expansion has occurred in recent years with investment in a new technologically advanced cellar and expansion into the Valpolicella area by purchasing vineyards in the hilly zone of Montecchia di Crosara. The estate now covers 90 hectares of vineyard. Ca'Rugate has been awarded the prestigious 'Tre Bicchieri' award rating from Gambero Rosso multiple times, making it one of the most awarded producers in the competition and has been hailed by the New York Times as one of the "Top Five producers of High-End Soave". |
