The 45-hectare appellation of Chablis 1er Cru Vaucoupin it is nestled on the right bank
of the Serein, near the village of Chichée. This ‘climat’ is made up of white limestone,
blanketed in some places by dry white clay. Tillage can be quite challenging due to
the shallow Kimmeridgian marls. The varied landscape includes a plateau, steep hills,
and a valley, likely once forested. While the sunny conditions promote grape maturity,
the well-drained soils also lead to low yields, especially in dry years. The vines for this
cuvée are cultivated on sloping hillsides with clay-limestone subsoils with Kimmeridgian
marl. They hold the Haute Valeur Environmentale (HVE) certification, which officially
recognises the environmental performance of winegrowers, including biodiversity
conservation, plant protection strategies, managed fertiliser use and water resource
management. Traditional vine training is employed, ensuring optimal conditions for the
ripening of the grapes.
