Wine Description
The PIUS Cabernet Sauvignon Adelaida District 2018 stands as a prime example of the exceptional wines that California’s Paso Robles Adelaida District has to offer. With a bold 14.7% ABV, this full-bodied red reveals a profound depth and complexity, drawing attention to its intense, dark colour. Upon the first pour, this wine envelops the glass with an aromatic bouquet that captivates the senses. The nose is a rich medley of dark cocoa, black olives, peppercorn, tar, espresso, and a hint of fresh mint, all of which meld harmoniously to create a multi-layered fragrance profile.
The palate mirrors the nose, delivering a creamy and focused cassis kick that complements the bold, slightly bitter nuances of coffee and charred earth. These contrasting flavours add intrigue and richness to the wine, making it both exciting and elegant. The PIUS Cabernet Sauvignon is complex, yet perfectly balanced, with a finish that lingers, reflecting the quality of the vines and the skill of the winemaker. Its slightly savoury edge paired with the rich fruitiness makes it an ideal choice for pairing with grilled meats, aged cheeses, and hearty dishes.

Winery | Pius is a young estate dedicated to small-production, terroir-driven wines from the finest Paso Robles locations. The estate is the brainchild of Anthony Versochi, one of the top winemakers at Daou, under Danny Daou himself. Anthony grew up in San Diego and was poised for life in Economics despite coming from a wine and agricultural background before sensibly heading sideways to the vines. In 2018, he decided to start his own label, and Pius was the result. His first vintage immediately received immense critical acclaim. |
