London Clay takes its name from the fossil-rich clay soils of Essex, renowned for imparting distinctive minerality and freshness. Established in 2019, the estate benefits from one of the driest and warmest regions in the UK, with the River Crouch providing protection against spring frosts. These ideal conditions, combined with meticulous hand harvesting, ensure the ripest fruit with balanced acidity and expressive flavour.

Unlike many English sparkling wines that use the Traditional Method, London Clay Brut NV is produced using the Charmat method. This technique, involving fermentation in stainless steel tanks for up to three months, preserves the vibrant fruit character and creates a clean, crisp finish with soft, persistent bubbles.
