The vineyard’s high density of 8,000 plants per hectare fosters intense concentration in the fruit, while its unique colluvial soils layered over marine limestone impart minerality and structure. These ancient soils and high-altitude conditions create small, flavour-packed berries that yield a wine of exceptional vibrancy and complexity.

Winemaking and Vinification

Meticulous Harvest and Fermentation

The grapes were harvested at five different times over a span of 1.5 months, ensuring optimal ripeness and aromatic complexity. The fruit underwent cold maceration for 5 days, followed by fermentation in the barrel at an average temperature of 26°C. Approximately 30% whole bunch fermentation was employed to enhance texture and aromatics. The wine was macerated on skins for 23 days before being matured in 100-year-old foudres for 15 months, ensuring gentle oxygenation and refined tannin integration.
