The appearance is star-bright, pale golden, and delicate, consistent bubbles. On the nose are generous aromas of baked apple and red apple skin with bright lemon notes. Undertones of strawberry and raspberry are followed by complexity and depth, rounding off the profile with fresh biscuit and baked shortbread. The palate offers a precise backbone and bright acidity, which gives this wine elegance and finesse. This structure is perfectly complemented by ripe red apple, pear, buttery lemon tart, and a mix of red summer fruits—Bready brioche and hints of fresh biscuit form the profile edge.

Winery | An exciting newcomer to the English wine scene, Everflyht was founded by husband-and-wife team Sam and Ben Ellis in 2016 when they planted the first 2.8 hectares of vines at the foot of the Ditchling Beacon, in the South Downs National Park in East Sussex. The name is a nod to the six martlets of the Sussex crest, symbolising knowledge, adventure and learning. Said never to land, these mythical birds are ‘ever-in-flight’ and make up the Everflyht feather, a symbol of the estate’s focus on innovation as well as its motto: "Never settle".
