Winemaking
Crafted by Joseph Bou Sleiman, a leading name in Lebanese winemaking, the grapes were hand-sorted for optimal quality. Fermentation occurred in stainless steel tanks at 14–16°C to preserve freshness. No malolactic fermentation was used, enhancing the wine’s purity and natural acidity.

| Winery | The vines are planted at 1,000 meters above sea level, where the warm days are tempered by cooler nights. The summer diurnal temperature difference is 20°C, which encourages an extended ripening period, concentrating the flavours and aromatic complexity in the berries while retaining balancing acidity from the cooler nights. The soil is calcareous clay, cool soil with good water retention properties, and good for nourishing vines during hot, dry summers. Due to its pH, calcareous clay soils produce refreshing wines, encouraging further balance to the fruit's ripeness. The vines are cane-pruned and are planted at a density of 4,000 vines per hectare. The vineyard is cultivated with respect for the environment, and the grapes are hand-harvested at optimal maturity. |
