Tasting Notes: Vibrant, Mineral-Driven Chardonnay with Citrus and Saline Layers
This wine opens with intense aromas of lemon zest, white blossom, and toasted hazelnuts, unfolding into a palate layered with bright citrus fruits, subtle florals, and a distinctive saline minerality. The finish is clean, vibrant, and refreshingly long.
Half of the grapes underwent skin-contact maceration in new 300l French oak barrels for four to five hours at low temperatures (5°C), enhancing flavour extraction and aromatic depth. The other half was fermented in terracotta amphorae to preserve the purity and freshness of the fruit. Daily bâtonnage during fermentation (16–20°C) added remarkable texture and complexity.

| Winery | The Chardonnay grapes come from the Cotes Catalans, the principle IGP allowing only mono-varietal wines. The vines thrive at an altitude of 385 metres elevation in the Haute Valle de l'Agly in the Roussillon region. The climate is Mediterranean, strongly influenced by cooling coastal breezes combined with mountain freshness from the foothills of the Pyrenees, which balance the hot, arid summers. The terroir is made up of a mosaic of black schist soils dating back to the Cretaceous period. The schistous marl produces shallow soils, which force the vines to send their roots deep in search of water and nutrients. The vineyard is certified organic, and no herbicides or chemicals are used. Yields are kept low to ensure a good concentration of pure fruit flavours, and the grapes are hand-harvested. |
