Tasting Notes
The bouquet of O' Scuru O' Scuru is both captivating and intricate. The nose is filled with the aroma of sun-drenched forest berries, with hints of wild cherries, raspberries, and blueberries, seamlessly interwoven with delicate spices and a touch of velvety vanilla. On the palate, this wine offers a luxurious smoothness, with the rich fruit flavors unfolding gracefully. Winemaking Process
The grapes for this wine were manually harvested in small baskets to ensure only the finest fruit was selected. Upon arrival at the winery, the grapes were immediately destemmed and gently pressed. Fermentation took place on the skins at temperatures between 26 to 28°C, enhancing color extraction and the development of aromatic compounds. Following fermentation, the wine underwent an additional post-fermentation maceration on the skins for one week. This process allowed for greater extraction of tannins and structure, contributing to the wine's firm yet elegant texture.
After fermentation, the wine was transferred to 500-litre oak tonneaux, where malolactic fermentation took place, softening the acidity and adding complexity to the profile. The wine then matured for 12 months on its fine lees, gaining further depth and richness. To preserve the wine's fresh character and fruit purity, it was aged for an additional year in stainless steel tanks before bottling.

Winery | The grapes come from a vineyard of 50 to 60-year-old vines known as 'Vigna Vecchia Contrada Feudo S.Anastasia'. It is situated at an elevation of approximately 620 metres above sea level, where warm days and cool nights encourage a long ripening period, concentrating the flavours in the grapes while retaining balancing acidity. The vines are grown in volcanic soils rich in minerals and fossils. The soil is permeable to air and water and is rich in pumice stone and microelements, which allow the plants to produce a complex aromatic profile. The vines are bush-trained using the traditional method. The old vines are cultivated following organic and biodynamic principles, and the vineyard is converted to organic status. The organic sulphur and copper treatments are only used when powdery or downy mildew seriously affects the vineyard. The vine moth is combatted by using natural pheromones, which generates confusion in the moth and prevents it from attacking the fruit. |
