- Complex aromas of white floral notes, stone fruit, and lime are layered with mineral notes through a smooth palate with restrained acidity, offering balance and freshness. 2022 saw rain during the vegetative season, which has become increasingly frequent over the past decade. Notably, heavy rains during late August accompanied lower temperatures, resulting in a more classic, refined and old-school fruit profile. It provided a challenge during vinification, but the results are definitely worth it.
This wine was vinified following a philosophy of minimal intervention. The grapes were carefully sorted before being fermented in amphorae with wild yeasts, which are associated with retaining the nuances and characteristics of the terroir. Following fermentation, the wine rested on its lees for approximately six months before being bottled unfiltered.

Winery | The grapes come from a carefully selected, western-facing vineyard in the Kilkis region of Central Macedonia. The soils comprise alluvial content, comprising clay, silt, sand, and gravel, rich in organic matter. The vines are trained according to the Double Cordon method, which helps to control yields and ultimately concentrate the flavours in the fruit. The vines are cultivated with minimal spraying and are virtually dry-farmed. The grapes are hand-harvested in the cool of the night to retain their fresh character and are transported by refrigerated truck to the winery. |
