- Aromatic notes of white flowers, apple, and pear are complemented by tropical orange flavours with a hint of honey, which is complex and rich yet fresh. A good year with sufficient water will give a balanced charge on the vine and help develop strong varietal characteristics.

Fermentation took place with selected yeasts using reductive techniques to ensure the aromatic quality of the fruit was preserved. Maturation lasted for four months in 400-litre Acacia barrels with regular bâtonnage to impart texture and complexity to the wine. Unlike other woods, Acacia preserves the freshness that characterises Picpoul and gives great complexity. Winemaker Iain Munson MW, creator of the cuvée, notes, “Acacia wood accentuates the aromatic qualities of Picpoul and does not dominate the natural expression of the grape and its special terroir.”
Aromatic notes of white flowers, apples and pear are complemented by spicy notes, leading to a crisp, fruity palate with a refreshing finish.

Winery | The grapes come from the best plots among the Picpoul vineyards, located along the banks of the Étang de Thau in a Natura 2000 zone. The proximity of the sea significantly influences the climate and the soil. The climate is very hot and dry during the summer, which forces the vine’s roots deeper into the soil in search of minerals and water. However, the sea reduces the impact of the heat, and the breezes help limit drought conditions and hydric stress. The nearby Étang de Thau is the largest lagoon in the Languedoc region and is a heat regulator. The complex soils of the plateau consist of silts and clays, sands and sandstones, and pebbles and conglomerates. The vines are meticulously pruned to control the vine's vigour and yields. The vines are cultivated sustainably, and Ormarine has been certified by Terra Vitis since 2018. The use of sexual confusion is employed to limit predators, and the careful use of sustainable treatments preserves the vines, vineyard and also nearby oyster farms on the Étang de Thau. The grapes are carefully harvested at night. |
