- The Sainte Claire Chablis expresses with a great deal of finesse the typicity of its Chablis soil: the Kimmeridgian. This vintage expresses the singularity of Brocard's wines through its strength, precision, and freshness. Lemon - Yellow fruits - Tangy On the nose, notes of lemon and yellow fruits. The mouth is wrapped, balanced, and tangy. A specific wine while gluttony. A fresh, flinty nose with bright apple and lemon aromas leads to a powerful palate tempered by elegant minerality. Compared to Brocard’s regular Chablis, this organic version has an extra degree of vividness and savoury complexity.
The approach is one of minimal intervention in both vineyard and winery: cultivation is practically organic throughout, with ploughing in place of herbicides, predators instead of pesticides, manure rather than fertilizer, and as little spraying as the grapes’ health requires. The results are pure, unadorned expressions of the great chalk slopes of Chablis.
