The body and the bouquet are no longer distinguishable, as structure and harmony merge into a perfect unity. Unctuous and firm, dry and caressing, wrapped and deep, it possesses all graces under an inflexible character.

VINE AGE
40 years old
Geology
One of Burgundy's most famous White Grand Cru. The vineyard is located northwest of the village of Puligny Montrachet just above the Montrachet plot. Soil: Comes from the Jurassic lands (175 million years old), on thin soils, alternating marls, marl limestone and stones. The pruning is done in Guyot with various works in green (ebubbing, paling, splashing).
winemaking
Manual harvest, sorting on vines then at the winery and finally pressing (pneumatic press) to obtain a slow extraction.
Breeding
Inforted after a slight unbursement. The mout of grapes is put in 228-litre French oak barrels (15% to 20% of new barrels) in which alcoholic and malolactic fermentations will take place in yeasts and native bacteria. Breeding will be long on fine lees for 18 months. No beating. One month before bottling, the wine from the various barrels is placed in a stainless steel vat for assembly followed by a light collage and a slight filtration before bottling. The bottling is done according to the lunar calendar.

Put
Bresse chicken with cream, veal sweetbreads with morels, truffled foie gras, County or old Cantal. Large fish and Crustacean (Lotte, Ecrevisse, Omble, Lobster), but also with a pan-fried calf. Serve at 13oC.
