Zuccardi Fosil San Pablo Chardonnay 2019

While Argentina may still be better known for its red
grape varieties, especially Malbec, the white wines from
the country’s top producers are quickly becoming a force
to be reckoned with. Among them is Fósil, the flagship
white wine from Zuccardi. It’s a stunning Chardonnay,
made by Sebastián Zuccardi, from the San Pablo
region of the Uco Valley.
Sebastián’s aim in his winemaking is to create wines of
great purity, firmly rooted in the terroirs of the Uco Valley
and Fósil is a perfect example of this philosophy. Described
by Sebastián as a ‘white mountain wine’, it comes from
the Zuccardi vineyard in Estancia Place which is within the
San Pablo region. Located 1400 metres above sea level
and only 300 metres from the Cordeillera, the foothills
of the Andes, it’s a wild, unforgiving land. Fósil was born
from the unique combination of cold weather, calcareous
soils, and Andean breezes from one of the highest areas
of the Uco Valley.
Fermented with native yeasts in concrete vessels and then
aged in a combination of concrete and 500L French oak
barrels, Fósil is a beautifully minerally yet rich wine. Poised,
elegant and impressive. The 2019 is only the third vintage
produced, from a vineyard first planted in 2011. Judging
by what Sebastián has achieved so far, the future looks
very exciting for Fósil and its cult status is set to grow
