Larry Cherubino Pedestal Margaret River Semillon Sauvignon Blanc 2019

This sophisticated and distinctively cool climate wine
has flinty notes of asparagus and sage, zesty, vibrant
and layered.


Producer Note
Former ‘Winery of the Year’ by James Halliday and Matt Skinner, Larry Cherubino
wants his wines to be distinctive and to speak clearly of their variety and vineyard
site. He believes in paying meticulous attention to the vineyard, canopy and water
management, picking at the right time and minimal intervention in the winery. Larry
also makes wine under the Laissez Faire label, an exquisite range of natural wines
which are the ultimate expression of site, made in small batches from hand
harvested grapes. From delicate whites to opulent reds, all his wines have pure class
and finesse.


Vintage
The region experienced good winter and spring rainfall followed by a cool summer.
These factors resulted n a later than usual grape harvest. Yields were down, but
quality was generally excellent across both whites and reds.


Vineyard
The Pedestal range is so named after the elevation of the Margaret River vineyard.
The vines are grown at the highest point of the Wilyabrup Valley, which is influenced
by the cooling ocean breeze. The soils in the northern part of Margaret River are ironrich laterite loams with high gravel content, which drain freely and warm up quickly
in the spring. Due the south facing slopes, the vineyard does not see the afternoon
heat and therefore it takes longer for the fruit to develop, concentrating the varietal
characteristics and flavours.


Winemaking
The Semillon and Sauvignon Blanc parcels were picked at maximum flavour maturity
over several weeks, to ensure that all the various soil types and aspects of the
vineyard were fully exploited. A combination of machine and hand harvesting was
employed. Only the free run parcels were used after a gentle pressing. Fermentation
took place at 11 to 13°C, with 60% of the juice being fermented in two year old oak,
for two months before final blending.
