Producer Note
Run by Pascal and Marie-Laure together with their son Marius and his cousin Gaël,
Domaine Tabordet is a 21 hectare estate, including five hectares in Sancerre and 16 in
Pouilly-Fumé. The domain is very much a family business, using the latest winemaking
technology. The vineyards are managed with the utmost respect for sustainability and
biodiversity and the estate is in conversion to organic status. The resulting wines are a
true reflection of the diverse soils which make up their estate, showing characteristic
flinty flavours, with good weight and a full body.
2021 was an extremely challenging vintage across the Loire Valley. A sudden severe
frost hit vineyards during early April, damaging the buds and significantly reducing
yields throughout the region. Rainy conditions ensued from May until the end of July.
August saved the vintage, with long, hot sunny days which allowed the grapes to ripen
well. At the beginning of September a storm brought welcome rain helping to increase
the yield slightly. While the production was significantly reduced, the remaining fruit
produced juice of excellent quality
The vineyard is situated in the heart of the Pouilly Fumé appellation on the right bank of
the Loire River. The vines are trained according to the Guyot method. The vineyard is
carefully cultivated throughout the year using organic methods and is in conversion to
organic certification. Pesticides and fertilisers are not used, instead tilling of the soil
reduces the need for weed killers, and certain parcels are left with grass cover to limit
the vigour of the vines. Deleafing takes place at the end of June. The soil in the
vineyard is made up of Kimmeridgian marl, which is a chalky clay, flint and pebbly
limestone, known locally as 'caillottes'. This soil imparts the distinctive mineral and flinty
characteristics to the wine. The harvest takes place between mid-September and midOctober when the grapes have reached optimal maturity.
The grapes were very gently pressed by a pneumatic press, to avoid any stalky
flavours. The juice was then left to settle so it was as clear as possible, racked and then
fermented in temperature controlled tanks with neutral yeasts. The wine was aged for
six months on its lees, prior to being bottled.
