An intense mineral nose followed by layered vibrant fruit
and a hint of oyster shell through to a long, textured and
salty cleansing finish. Classic saline Chablis.
Producer Note
Domaine Jean Goulley was formed in 1986 by Jean Goulley and is now run by his
granddaughter Maud. In January 2022, Maud took over from her father Philippe, who
was involved in the estate for nearly 40 years. The family owns 4.5 hectares in the
Premier Cru appellations, which are the heart and soul of the Domaine. They own
approximately 18 hectares in total. In 1991, the Domaine became one of the very first
certified organic producers in Chablis. All of the vineyards are farmed organically and
the wines are produced with restricted use of sulphur. The Goulley family believes the
organic farming methods permit an expressive and sustainable soil. Their wines are
mineral, pure and lively.
Vintage
The growing season began with an unusually mild winter, which led into a clement
spring. Warm weather during the spring cumulated in an unnaturally warm April,
prompting early budburst and flowering. This set the scene for a rapid growing season,
with a hot, dry summer and low rainfall resulting in arid conditions. This slowed down
the ripening and the vines produced and average yield of small grapes with
concentrated flavours.
Vineyard
Montmains is a Premier Cru vineyard in Chablis, which stretches along an exposed
hillside to the south west of the town of Chablis itself. It is renowned for producing fresh,
elegant wines with good minerality. Maud and her family believe in the ethos of
organic farming along with that of minimal intervention; all of their vineyards are farmed
organically. The Double Guyot trained vines that have an average age of 45 years and
are grown in Kimmeridgian soils, which are rich in clay and limestone with fossilised
seashells. The vines are planted at a density of 5,700 vines per hectare and yields are
kept to a maximum of 55 hectolitres per hectare. Maud believes in highlighting terroir
and she produces her wines in an unoaked style, allowing them to reveal the purity,
minerality and vitality of the soil.
Winemaking
The grapes were harvested at optimum maturity and were fermented with natural
yeasts in temperature controlled vats using organic principles. The wine spent nine
months in stainless steel vats and was made without oak influence to retain the purity of
fruit and to let the characteristics of the Premier Cru Montmains terroir shine through. A
restricted use of sulphur was used during the vinification and the wine was lightly
filtered, prior to bottling.
