It is the stony ground to which the vine clings that has given rise to the name of this
exceptional "Climat": "Perrières". This Premier Cru has been renowned for its
finesse and pureness for many years: in the mid-19th century, the winemaker, M. de
Vergnette stated in one of his works that "Apart from the true Montrachets, I know
of no other white wine so exquisite". Later, Dr. Lavalle mentioned it as "Tête de
cuvée" in his 1855 rating.
T A S T I N G
TASTING NOTE: A complex blend of floral notes and delicate oaky touches. Both full and subtle,
this wine reveals considerable personality on the palate. Its marked liveliness gives it great
freshness, a sign of good ageing potential.
FOOD/WINE PAIRING: Fish and poultry dishes in cream sauce.
SERVING TEMPERATURE: Between 12°C to 14°C
AGEING POTENTIAL: 10 years and more

HARVEST: manual, in small cases of 13 kg. Careful manual sorting of each grape.
VINIFICATION: The pressing takes place in two phases: evacuation of the first juice, then
pressing in two-hourly cycles.
MATURING: 10 to 12 months in French oak, with 15% new oak.
AGEING: The cellars of the Bastions of the ancient Château de Beaune offer natural ambient
conditions that are perfectly adapted to ageing the Premiers Crus.
