Location: Exceptional location for this Grand Cru on the heights of the Corton hill between Ladoix-Serrigny and Aloxe-Corton
South East. Altitude 280 meters.

Production: This magnificent appellation comes from the purchase of grapes and wines. My annual production is around 600 bottles.
Grape varieties: Chardonnay.

Mode of Culture: Respect for the land and nature is essential. The inspiration in biodynamics and sustainable agriculture is the mode.
Harvest: Manual.
Vinification: 
After light crushing, the grapes are poured into the pneumatic press to be pressed for about 2h30. The juice is then placed in a vat at a temperature of 8 ° C for two days in order to remove the solid parts (settling).

Yeasts: native types.
Aging: 35% new barrels for 14 to 18 months. 
Natural malolactic fermentation in barrels.
Bottling: Light filtration on earth. Bottling is done at the estate with my own bottling line in late winter / early spring.

Tasting Note: Minerality and finesse are the trend. The well-chiseled mouth is of impressive length with the legendary fat and butteriness of the Montagne de Corton
Food / Wine Pairing: With nothing, it is breathtaking! But also, of course, great fish and perfectly cooked white meats.
