- Refreshing and crisp with mouthwatering aromas of pineapple, golden apples, and delicate spicy notes. On the creamy, fresh palate, the fruit envelops a mineral core through to an effortlessly elegant finish.
The grapes were gently destemmed and pressed, and the must was decanted naturally for 12 to 24 hours. The must was fermented with naturally occurring wild yeasts in a combination of stainless steel tanks and amphoras under strictly controlled temperatures. The wine did not undergo malolactic conversion and was then aged for 12 months in amphoras and neutral large Slavonian oak, in contact with the fine lees. Further bottle ageing of six months imparted elegance to the wine.

Winery | The Grecchetto di Todi grapes come from a single vineyard, Fiorfiore, in the Todi subregion of Umbria. The microclimate experiences cold and rainy winters and cool, ventilated summers, which help to produce a refreshing vibrancy to the grapes. The vineyard is 300 to 380 meters above sea level, where considerable thermal excursions between day and night allow a slow, gradual ripening of the fruit, encouraging rich fruit flavours balanced by natural acidity. The soils comprise white clay, calcareous marl, chalk, and sand, offering the vines great nutrients and balance. The Guyot-trained vines are carefully cultivated following sustainable and organic principles. Weeding takes place in alternate rows; care is taken to prevent soil erosion and compaction; green manure is used for fertilization; grasses and Cruciferae plants improve soil structure and fertility. |
